New Orleans radio station WWOZ 90.7 FM published That Sounds Good! A Cookbook Celebrating 30 Years of WWOZ in 2013, compiling some authentic and favorite southern dishes submitted by Louisiana musicians and WWOZ members and staff. Here we share a selection of recipes reprinted from the cookbook, which can be purchased here.
Chubby’s Creole Chicken Cooked in Tomato Sauce
4 (8-ounce) cans tomato sauce
Green bell peppers, chopped
1 onion, chopped
3 pounds boneless chicken breasts, cut into small pieces
3 pounds smoked sausage, cut into small pieces
Hot cooked rice
Get a nice size pot out. Fill it half-full with water and bring to a boil. Pour the tomato sauce in it. Add the vegetables. Let it cook for about 45 minutes. Add the chicken and let it cook for about 30 minutes. Add the sausage and let it cook for another 30 minutes. Don’t forget to cook some rice!
Put some rice on the plate, then the gravy on the rice, then the meat. There you have it… ready to eat.
